"Beef with Bone Asam Pedas" for today...
This is one of my father's favorite (Hi Babah ..(‾◡◝ )...)
1 kg of beef with bone (boil till 3/4 soft)
(A) - Blend
1 big onion
1 garlic
1 to 1/2 inch of shrimp paste (belacan)
1/2 inch ginger
1/2 inch of turmeric

2 stalks of lemongrass (pound)
2 - 3 pieces - kaffir leaves
1 inch galangal
Blended dried chili paste

Methods
Blend (A)
Heat oil and fry (A) with 2 stalks of pound lemongrass until fragrant and a bit dry
Add in the blended dried cili paste
Add in funugreek (6 or 10)
Add in funugreek (6 or 10)
1 inch of galangal (pound)
Add in the beef
Then, add 2 or 3 pieces of kaffir leaves
Then, add 2 or 3 pieces of kaffir leaves
Let it cook for a while
After that, add in 2 medium size of dried tamarind slices or asam jawa paste
Leave it for 1 or 2 minutes
Leave it for 1 or 2 minutes
Next, add in the water from the beef you boil before (depends on how thick the gravy you want)
Salt to taste
Let it cook for further about 5-8 minutes, add water if require

Finally, add 2 eggplant cut in cubes (optional) and let it simmer for about 1 or 2 minutes.
Serve with hot rice or bread.
Note - You can add or reduce the quantity of the dried tamarind slice or the tamarind juice to your taste. The Asam Pedas must have the slight sour taste.
