Tea Party..

I simply love Tea Party.., the themes, the decorations, concepts, the preparation and anything about Tea Party. 

Since I was tight up with my schedule last month..,  I'm unable to arrange one for my little daughter...

BUT

last week..I managed to fulfill her wish and I am glad and happy for her and me. I am happy that I'm able to explore and do something that I like during the preparation for the Tea Party. Actually ..nothing much to do ! I only do with all the thing that I have at home and decorate and decorate!

At last..I love the results..my daughter love her tea party too.., thumbs up to me !..

At the end of the day..before she went to sleep.., she kissed and hugged me ..and said.."thank you Umi for the tea party..i am super happy today.., i love u "..

Again..the art of communication is simply amazing...it can turn you up and even turn you down..

I am thankful to have her in my life.., her warm loving remarks will always make my day..!

Birthday

What is Birthday ..well its when a person celebrates his/her anniversary day of birth,

And its the day of happiness for most children..they simply love cakes, candles, presents and the wishes. 

Like any other kids, last month was my "little princess" birthday. She wanted to share her wonderful day with all her friends at school. I prepared some cakes, party packs and ordered some pizzas for her friends and teachers. 

I know its not the custom to celebrate all this.., but to see the smile in her face  ...its a happiness to me! 

Yes..like any other parents..nothing its more important than HAPPINESS..


My Dearest Daughter..i really love you, YOU will always be my little girl

Today ..my Tuesday at Home

Now, its Autumn..its my favourite season of all. The weather and the colors of the trees .. ..just simply AMAZING. 

Nothing special ..just another day while I'm here. Many things happened in this world, and life is just unpredictable ..so as we are still here ...do the best of everyday in life. 

This week will be the school holiday for my son and not for my daughter. How I wish they could have the same holiday so that I could plan something for them. 

Since they are at home..I prepared simple lunch for them. I made them Spiced Fried Chicken  to go together with sambal belacan and white rice. Simple and satisfying for them. 

If you wish to try ..here goes the recipe..

Spiced Fried Chicken (original recipe from Chef Hanieliza- tq Chef, simply love your simple yet delicious recipe)

Ingredients (A)

5 pieces of chicken legs
1 tspn of white pepper
1 tspn or tbspn of chili powder
1 tspn of turmeric
salt 

Ingredients (B) - Blend

5-6 clove of garlic or 1 tbsp of  garlic
1 inch of ginger or 1 tbsp of the ginger
3/4 stalks of lemon grass
(Note- You can also add an onion if you like)

Methods

Marinate A and B for atleast 1/2 hour
Heat the oil and deep fry the chicken until golden brown. 
You can also add the curry leaves when frying ..its optional anyway..

No matter how the recipe is...,  ..we do have certain instinct for our cooking whether to add/ reduce or even to omit certain ingredients ...follow your instinct and taste ..the recipe is just a guide and the rest is all your show..:))

Kuih Koci

Last weekend.. I made my father's favorite "kuih" called "Kuih Koci". 

I used the recipe of  Chef Norzailina Nordin in her book titled "Masakan Popular Malaysia". I bought this book about 7 years ago and having it till now..its really help me a lot ..and what a great guide for me in my kitchen *-*.

If you feel like trying Chef Norzailina's version..here it goes..

Kuih Koci Chef Norzailina Nordin (for 6 to 8 pax)
Source - Masakan Popular Malaysia published by Pustaka Zaman
Pg 74 

For the Dough

500 gm of Glutinous Rice Flour
1/4 tspn of salt..(reduce to your liking)
450 ml coconut milk
Cooking Oil
20-25 pieces of banana leaves (18 x 20 cm, heat it at the stove until the color change (for a while). This will make the banana leaves pliable. 

Coconut Fillings

4 Tbspn of white sugar 
5 Tbspn of brown sugar
100 ml water
1 Pandan Leave 
280 gm white shredded coconut

How to make the Filling

1) Boil the white and brown sugar with the water until it dissolved. Sieve them.
2) Add the shredded white coconut in a pan and add no1. Add the Pandan leave. 
3) Mix well and stir on a medium heat of fire until the mixture thicken. Set aside to cool.
4) Optional - you can add a pitch of salt if you want you.


How to make the Dough

1) Mix the glutinous rice flour, salt, and coconut milk until it become a soft smooth dough. 
    (Add the coconut milk bit by bit). 
2) Separate the dough to about 20-25 small balls (it is up to you for the size of the dough, no 
    special size for this..I prefer the medium size..not to big!)
3) Take one of the balls and flatten it to put in the filling, about 1 1/2 to 2 teaspoon for each 
     balls.
4) Take the banana leave 
5) Dip in the oil (as per the above pic)
6) Put the ball in the banana leave and wrap it neatly wither a cone shape or the normal 
     folding.
7) Repeat the same steps for others.
8) Steam for about 15 to 20 minutes in a medium boiling water.
9) Remove from steamer and allow it to cool before serving. 

Note : the steamer should be in medium heat.

My Roti Jala again..this time for Iftar just after I came back from our family's summer break...this time .. looked a bit different that the previous RJ that I had made..not like "curlers"..whatever it is..I used the same recipe as I updated before.

Its Durian ...Serawa Durian..


What is Serawa Durian? 


Serawa Durian is a mixture of the King of all fruits called Durian with coconut milk, brown sugar/white sugar, a bit of salt and pandan leaves.


It is one of the best  Asian dessert that can be enjoyed with Pulut (glutinous rice (sticky rice) + coconut milk), roti jala or bread.


Yes! Yesterday I made some serawa durian for my family. They simply loving it ! 


If you would like to try..here goes the recipe..


Pulut (Glutinuous Rice)


2 cups of glutinous rice
2 cups of  thick coconut milk
1 cup of hot water
a bit of salt
1 or two pandan leaves


Methods


Take 2 cup of glutinous rice and add 2 cups of thick coconut milk and I cup of hot water.
Add a bit of salt and stir evenly.
Add 1 or 2 pandan leaves and cook like normal rice.

Serawa Durian


Ingredients


5- 6 pieces of Durian
1 can of coconut milk or more (400ml) 
Brown sugar 
White sugar (optional)
1-2 pandan leaves
a bit of salt
a bit of water (optional)
Corn flour (optional) - to make it thick


Methods


Add all the above in a pot and cook on low heat. Stir often.
Cook about 10-12 minutes, add a bit of corn flour if you want it to be a bit thick.
Adjust the ingredients to your liking.

Friendship...

Hi All...How are you? Hope all of you are just fit and fine.


I am so tight up with so many things nowadays ...and will update my blog whenever I have the time..

Okay..let me start with ..., 


I will definitely miss a friend of mine who is going back this coming Thursday, 13 June 2012  to our home country for good.


I believe..Good Friends are like "Famous Amos" cookies.., the taste will always remain in my tongue and in my mind ..., Yes ! good friend will always stay in our heart ..

It is difficult to find a good friend but once you have them...appreciate and accept them as they accepted us.., we are not perfect nor close to perfect..

To this friend of mine..all the best in life and hope to keep in touch.

11 March ..

Tomorrow at 2.46 pm, will be exactly 1 year since the last Sendai Equake and Tsunami 2011. I just could not imagine what I had experienced on that day...it was just like a dream ..bad dream.  On that 11 March, me (myself),  my 4 years old daughter together with my 2 close friends were in a restaurant in Shinjuku for lunch after our window shopping together. 

Actually, I had a very strange feelings from the day before it happened, it was kind of bad feeling that I could not figure ..What?!

So..at about 2.46 pm, that was the historic time of the devastated tragedy in Sendai, the Earthquake plus the Tsunami.., only God knows what was my feeling at that time..

It started with a mild move then it gotten more bigger. We decided to walk out from the restaurant ..and we saw..all the Japanese were looking up..up at the cloud. I am so scared compared with my 2 friends and my daughter was full of shocked. Many things occurred in my mind..especially to see all the tall buildings in the middle of  Shinjuku town swayed left and right. Our foot goes up and down together with the sound of the movement of the earthquake proof buildings. The faces of my love ones automatic played in my mind. I just felt like.. was it the end of the world or was it really bad earthquake ...

I prayed in my heart and really hope for the earthquake to stop. After a while it stopped and we decided to walk towards the station..and too bad all the trains were suspended at that time. 

After that..the earth started to move again..for some time..people got panicked again. 

At last we decided to walk from Shinjuku to Shibuya..its about 6km.  I felt that day was so dark and full of sadness. For that night I had to stay at my friend's house ..and I managed to come home the next day.., I am thankful ..so thankful...


I just can't believe my eyes ...


Praying for the best ..

My sincere condolences to all that lost their families in that tragedy...and may all of us be protected no matter where we are...

Tomorrow will be a sad day to remember.., but while we are still here..we hope for the best and prepare for the best...

Chocolate Muffins...

Yesterday, I baked some Chocolate muffins for  breakfast as requested by my son. Since I do not have the mood to bake or to practice my icing ...I agreed to make him a simple muffin. He was so happy and repeatedly said.." this was what I wanted..simple, tasty and yummy...".

Tuna Croissant Sandwich..


Felt like eating Tuna Croissant while on my way back from the clinic with my darling daughter.

Here is the Recipe.., I just use what I have in the kitchen ..

Tuna Croissant Sandwich


Ingredients

2 croissants
1 1/2 small can (about 80gm each can) tuna chunks in oil, drained
mayonnaise
thousand island (if you want to)1 small onion, finely chopped
salt to taste
black pepper to taste
sliced cucumber
shredded cabbage (since I do not have lettuce and tomato)


Methods


Drain the tuna and light mash tuna chunks in the bowl
Add in chopped cube onions, mayonnaise, thousand island, a bit of salt and black paper.  Mix them well.
To assemble the croissant sandwich - make a slit in the centre of the croissant to fill in the Tuna. Do not cut through both ends. Place the shredded cabbage (or lettuce), tomatoes and cucumber in the pocket. Lastly add the Tuna filling, you can add more black pepper if you like it to be spicy.
Done...


I LOVE to eat this with the chilly or thai sauce. This croissant will always remind me of my father ..this is his favorite choice at Deli France.
