My Nasi Lemak...





Prawn Fried Kue Teow

Yesterday, I had my Japanese class with my friend, Junko Horie. Since the timing was close to lunch ...I made some simple "Prawn Fried Kue Teow"  for our lunch together.

I kept some for my family..and I am glad they like it esp. my daughter.., she like it very much.  Actually, I just use what I have in my fridge and kitchen..


and here how the recipe goes..


"Prawn Fried Kue Teow"
(for 2-3 pax)


Ingredients


Kue teow                                    400 gm (or 2 pack of small Kue Teow packs)
Big Onion                                   1 (about 200gm) - blended
Garlic                                          2 clove - blended
Chili (blended/powder)                2 tbsp
Prawn                                         16 pieces (your choice ..)
Egg                                              2 
Bean sprouts                              200gm (your choice..)
Chives (daun kuchai)                 1 bunch
Cooking Oil                                1/4 to 1/2 cup 


*** (Sauce)
Chicken Stock                                        I used 1 chicken cube + 3/4 cup water
Soy Souce                                             1tbsp                    
Oyster Sauce                                         2tbsp
Cooking Oil                                            1tbsp
Shrimp paste (otak udang)                    1tsp
Add salt, sugar and black pepper 
(You can also add about 1tbsp light soy souce, but I have none)
(Boil all the (***) ingredients for a while)


Methods


Heat the pan with 1/2 cup of cooking oil
Fry the onions, garlic and garlic till fragrant
Add in the blended or powder cili (2tbs) or less
Let the chili cook for a while
Add  *** (Sauce)
Add in Kue Teow (flat noodles) 
Add in the prawns (let it cook for a while - not too long)
Add in the eggs (continue to stir-fry and make sure the egg is cooked) and a bit dry
Lastly add in the bean sprout and Chives (daun kuchai)
Make a couple of quick stirs and off the heat
Serve while hot with small chilies...


This can also be served during lunch, tea and dinner..

EQuake...

Good morning ...My Saturday was greeted by the EQ of 5.7 at Yamanashi - ken Tobu last 34 minutes followed by twice, 4.1 at 0804 hrs and 3.3 at the same place at 3.3, 25 minutes later. 
Yamanashi-ken and Yokohama is about 139.6 km and it takes us abt 2 hours 24 mins if we are driving from Yamanashi-ken to Yokohama.

Am I scared of the EQ.., the answer is Yes and No


YES... to feel and see my surroundings shaking...just could not believe how I felt at that time..
NO..because I am here...


True..I am more alert about EQ and I really pray and hope for the best for everyone in Japan and in this world..


I believe my destiny in this world is already written..

How do I make this..

First..Heat the pan and make the dots...let it cook for a while with slow heat, very slow heat..

Pour in the batter, swirl the pan to distribute the batter evenly..once cook, take it out

Put at the back of the wrapped plastic plate


Put the fillings and roll them..


The Polka Dots...
As for the Polka dots color, take some of the batter to a small bowl, add in the color and add some flour to make it a bit thick. Put the mixture to a zip lock or piping bag. Cut a small hole at the edge. Start to dots and dots...

Kuih Dadar or Rolled Kuih is flavored with pandan juice and filled with grated coconut brown sugar. The main ingredients for this kuih is pandan leaf.  This is one of the popular Malaysian's sweet dessert. For me.., the difficult part is when you roll the kuih, sometimes the skin will crack and end up horrible ...sigh! 

After few trials with no good results to me..huh!!..(yes..keep calm..! )
I decided to use my "Roti Jala" recipe for this. I just have to add the pandan leaf  blend together with a cup of water to obtain the pandan juice. The rest I remain as per the recipe.
And suprising..it turned up well for me..(Yes!)

Let see again the recipe that I had used..

Kuih Dadar/Rolled Kuih

Ingredients

*First, blend 3 or 4 pandan leaves with 1 cup of water 
Sieve them for the juice

2 cups of flour
*1 cup of pandan juice blended water 
1 cup of fresh milk
1 egg
2 or 3 tbs of oil
Pinch of salt
A bit of green coloring 
Pandan leaves (2 or 3)

Methods

Mix all the above and BLEND them together in a food processor
Sieve them
Make sure the batter is smooth and not thick
Grease your non-stick pan with some oil or butter
Use your non-stick pan with small heat
Pour in the batter, swirl the pan to distribute the batter evenly
Allow the batter to set 
Off the heat
Take the batter out
and
Place the coconut filling and begin to fold them.

Tips - You must use "good quality" non-sticking pan for this and do not mix the pan for daily use. 
I also used the "plastic wrap" to wrap my plate where i will put the batter. This is  to avoid the batter to stick at the plate..like this...(it works well for crepes too..)






As for "coconuts fillings"..kindly browse other recipe because that "fillings" was made by my mom in Kuala Lumpur for me to bring to Japan..so sorry for that...
